This project was inspired by a simple question: Why has no one ever dedicated a space entirely to spritz with artisanal bitters? So, we did it ourselves.<br \/>\nAnd as far as we know to date (and we\u2019re still looking), we\u2019re the only bar in Italy with such a wide selection and a menu dedicated to Italian artisanal bitters.<br \/>\nHere, spritz isn\u2019t just one drink. It\u2019s a whole world. We\u2019ve created a drink list with over 30 variations, each one unique, each with its own distinct identity. Bitters and a few amaros\u2014all artisanal, all Italian, and often hard to find. Each glass tells the story of a region, a recipe, and a history.<br \/>\nThen there\u2019s everything else. The setting. Just a few tables, right in front of the Estense Castle. The light that changes throughout the day. The music that plays in the background without being intrusive. The chatter that stretches on without hurry. And then there\u2019s that vinyl corner, which isn\u2019t there by chance: pick a record, put it on, and the spritz changes again.<br \/>\nBecause, in the end, you don\u2019t come here just to have a drink.
